Ingredients:
1.76 lbs veal cutlets (800 g)
3 eggs
3/4 cup flour (100 g)
1 cup breadcrumbs (100 g)
Flaky salt
4 cups iceberg lettuce (100 g)
1 cup cherry tomatoes (100 g)
3/4 cup shaved Parmesan cheese (80 g)
1/4 cup balsamic glaze (4 tablespoons)
Vegetable oil as needed
Instructions:
Dredge the veal cutlets first in the flour, then in the beaten eggs, and finally in the breadcrumbs.
Heat the vegetable oil and fry the breaded cutlets until golden brown, turning them occasionally. Let them drain.
Meanwhile, slice the iceberg lettuce and quarter the cherry tomatoes.
